Our potato mojo picón (typical Canarian sauce: garlic, vinegar, bell pepper….) to accompany the potatoes. It is a tapas concept that provides you with the right amount of potato and sauce in each bite. We also have varieties of brava potato, in the same format.
Fry directly from frozen, with plenty of clean, very hot oil at 180ºC until the center reaches 74ºC. Bear in mind that if many potatoes are fried with little oil, the oil cools down and the result will not be optimal. Also, between frying and frying, the 180ºC must be allowed to recover in order to fry correctly again. It is advisable to let it rest for 2 minutes before serving.
