PANIPURI WITH OXTAIL

Panipuri or golgappa is a breaded and deep-fried hollow spherical shell, approximately 1 inch (25 mm) in diameter, traditionally stuffed with a combination of potatoes, raw onions, chickpeas and spices ….. It is a common snack and street food in India.
To regenerate our Oxtail pulled:
MICROWAVE: It is not necessary to defrost previously, pierce the top of the package at different points and heat directly in the microwave for about 5 minutes at 800W. Once ready, set aside.
We at Exquisitarium will make our version of panipuri. To make the shell we take the panipuris and fry them, they become spherical balls, cut the top and fill the hollow inside with pulled beef tail.
We decorate it with a caramelized onion, a currant, a little bit of alioli and a sprig of chives.
