Fry from frozen, in a generous amount of pure, very hot oil at (180°C/350°F) Keep in mind that if you fry a lot of croquettes in a small amount of oil, the oil will cool off and the result will not be ideal. Let it reheat to (180°C/350°F) between croquettes so that they fry properly. Let’s rest for 2 minutes before serving.
